Thai Tofu Cake with Chili Dip 泰式豆腐

Tofu Cake:

Firmed Tofu 硬豆腐 - 2 pcs
Lemon Grass (bottom part) 香茅 (下面部分) - 1 no.
Fresh Ginger (grated) 姜蓉 - 适量
Kaffir Lime Leafs 疯柑叶 - 3 leafs
Shallot 葱 - 1 no.
Fresh Chili 辣椒 - 1 no。
Fresh Coriander 香菜 - 适量
Plain Flour 面粉 - 50g
Salt 盐 - 适量

1. Mix the tofu with lemon grass, ginger, line leaves, shallots, chilies and coriander in a mixing bowl.  Stir in flour and salt to make a coarse, sticky paste.
2. Cover and chill in the refrigerator for 1 hour to let the mixture firm up slightly.
3. Form the mixture into large balls, and using floured hands, flatten into circles.
4.  Heat enough oil to cover the bottom of a frying pan over medium heat.  Cook the cakes, turning half way through, until golden brown.
5.  Serve warm with chili dip.

1. 把豆腐,香茅,姜蓉,疯柑叶,葱,辣椒和香菜放进碗里压烂混合。加入面粉和盐混合成稍微粘手的团状。
2. 用保鲜纸包着冷藏1小时至稍微硬。
3. 把豆腐抓成圆形压扁成饼状。放一些油进锅里以中火烧热。把豆腐煎至金黄色。
4. 趁热吃。

Chili Dip:
Apple Cider Vineger  苹果醋 
Shallot 葱
Castor Sugar 砂糖
Chili 辣椒
Coriander 香菜
Salt 盐
Tomato Puree 番茄泥

1. To make the dip, mix all the above ingredients.  
    酱汁 - 把以上所有材料混合均匀即可。
