Vegan Yam Cake 纯蔬芋头蛋糕


自己蛮喜欢的一个蛋糕。之前在蒲种开了蛮多堂课了,想想应该不会再办这堂课,食谱收着没意思,分享了好让大家也可以在家试做。

Vegan Butter Cake 纯蔬牛油蛋糕

Wet ingredients 湿材料:
(A) Unsweetened Soy Milk 无糖豆浆 – 225g
      Apple Cider Vinegar 苹果醋 - 1 tsp
(B) Vegan Butter Spread (我用 Nuttelex) 纯蔬牛油 – 115g
      Raw Cane Sugar 原蔗糖 – 80g
      Salt – pinch
      Organic Vanilla Extract 香草精 – 1 tsp

Dry ingredients 干材料:
(C) Bob's Red Mill Pastry Flour 低筋面粉 – 180g
      Baking Powder 发粉 – 1.5 tso
      Baking Soda 小苏打 – ½ tsp
     
*面粉只是个人喜欢和有信心的牌子。用其他低筋面粉也可。

Method 做法:
1. Combine soy milk and vinegar.  Set aside for 5 minutes. 
 把豆浆和醋混合。静置5分钟。
2.Sieve dry ingredients (C). 把干材料(C)一起过筛。
3. Beat vegan butter, cane sugar, salt and vanilla extract together with electrical egg beater until 
    creamy and fluffy. 用电动打蛋器把牛油,蔗糖,盐和香草精搅拌至顺滑和蓬松。
4.Gradually add in milk/vinegar mixture (1) and sifted flour (C).  Combine evenly.
 分次加入步骤(1)的奶/醋和已过筛了的粉料(C)拌匀。
5.Divide the batter into 3 equal portions, pour into 3x6” round cake tin.
 把面糊分三个同等份,倒入三个6寸圆模里。
6. Bake at 180⁰C for about 10-12 minutes or until done. 180⁰C烤约10-12分钟至熟。
7. Remove the cakes from cake tins. Let cool on wire rack. 把蛋糕从模里拿出。放在铁架上待
    凉。 

Yam Filling 芋头馅:
Yam 芋头 – 300g (sliced, steamed and mashed 切片蒸熟后压成泥)
Coconut Flesh 椰肉 – 130g
Coconut Water 椰水 – 60g or more*
Fructose 果糖 - to taste 
Salt –  to taste
Coconut Oil 椰油 – 1 Tbsp

Method 做法:
1. Blend all the above ingredients (except coconut oil) until smooth and creamy.
 把以上所有材料 (除了椰油)搅拌至顺滑。
2. Gradually add in coconut oil.  Mix well. 慢慢加入椰油拌匀即可。

*椰水分量自己慢慢调整。以足够把芋头搅拌至顺滑即可。先下60g, 不够再加。 上过我课的朋友都应该知道我最喜欢 agak-agak. 哈哈。

Sweet Potato Sauce 紫薯酱:
Purple Sweet Potato – 45g
Santan 椰浆 适量*
Fructose 果糖 – to taste
Salt 盐 - to taste
Coconut Oil 椰子油 - 1/2 Tbsp


Method 做法: 
1. Blend sweet potato, santan and icing sugar together until smooth and creamy.  Sieve.
 把紫薯,椰浆和糖粉一起搅拌至顺滑后过筛。
2. Blend in coconut oil. 拌入椰油。

*椰浆分量自己慢慢调整。足够把紫薯搅拌至顺滑即可。 


Cake Assembly:
1. Place a slice of cake in cake tin. 把一片蛋糕放入松低的蛋糕模里。
2. Spread 1/3 of the yam filling. 抹上 1/3的芋头馅。
3. Place another slice of cake on top of the filling. 再放上另外一片蛋糕。
4. Repeat step (2) and (3) till the last piece of cake. 重复步骤 (2)和(3)至最后一片蛋糕。
5. Cover and chill the cake overnight.  盖好。把蛋糕冷藏隔夜。
6. Pour the purple potato filling befofe slicing. 切片前倒上紫薯馅。
